Here are two Google Docs stencil you can use for APA or MLA formatted books. The templates are View Available, so you will need to make a duplicate if you want to use one. Click the Use Template button in the upper right corner to make a copy.
Like templates have headers, leaf numbers, margins, fonts and line interval already set going for you. Just make a copy and species over the filler text.

Google Docs also has a Citation tool to help you paper your book and in-text citations. You can seek it in the menu under Tools=>Citations. Here is a short record showing the procedure:
